Ingredients
1 1/4 lbs baby red or fingerling potatoes, scrubbed and quartered
3 Tbsp extra virgin olive oil
salt, to taste
freshly ground pepper, to taste
1/4 c Giovanni Rana Basil Pesto
Directions
  1. Preheat the oven to 375°F.
  2. Toss the potatoes in a bowl with the olive oil, salt, and pepper, transfer to a rimmed baking sheet and roast until golden and tender-firm, 20-25 minutes.
  3. Remove from the oven, drizzle the pesto in top, stir, and return to the oven for 5 minutes.
